To make icewine, the grapes are left on the vine until after the first frost. The grapes must be picked late in the year- after November 15; early in the day- before 10 am; and temperatures must not be higher than minus 8C. At this temperature the grapes are frozen and are as hard as marbles. When the grapes are in their frozen state they are pressed. This leaves a highly concentrated juice, very high in acids, sugars and aromatics. This tea celebrates the flavour of icewine and is a lovely complement to any meal.
